Restaurant Spotlight: Viking Soul Food in Portland

As Scandinavian food is becoming one of the trendiest foods to taste and be inspired by, Scandinavian style restaurants are popping up all across the world, and in the US. While most restaurants are decorated in Scandinavian design, and in earth tones and simple elements reminding of the nature in Scandinavia, there are some surprises.

One of them is Viking Soul Food trailer in Portland, Oregon, serving Norwegian lefses, which are Norwegian wraps, kind of like tortillas, or crêpes, but made out of potatoes and flour. Viking Soul Food is a cool concept of offering something uniquely Norwegian in a very unique American way from a silver trailer.
