Topsail Island Summer Vacations
For nine years, I’ve vacationed with my husband’s family on Topsail Island, North Carolina. This simple island calls for lazy beach days, Gin & Tonic drinks on the porch, and home-cooked meals simple enough to prepare in a vacation rental.
We always buy fresh shrimp fresh delivered to the market straight from the boat.
I take that shrimp and make a pasta salad recipe that my Dad gave me over 20 years ago. This recipe is so simple, and it is a crowd favorite.
Shrimp and Feta Pasta Salad
1 pound peeled shrimp, cooked and deveined
1 cup feta cheese
1 cup cottage cheese
4 green onions
1 diced cucumber
1 ½ tsp of dried oregano
1 tsp pepper
8 ounces of angel hair pasta
Cook pasta. Combine all ingredients. Add to cooked pasta. Mix well. Serve immediately.
Even though there are nine of us in the rental, we still set a formal table with cloth napkins.
